Beef Enchiladas

Ingredients

  • 1 lb ground beef
  • 1 pkg chili seasoning mix
  • 18 oz tomato sauce
  • 1 cup water

  • 12 corn tortillas
  • 1 lb cheddar cheese, shredded
  • 3 onions, chopped

Instructions

  1. Meat sauce: Brown ground beef and drain. Mix in the chili seasoning mix, tomato sauce and water.
  2. In another small fry pan full of water, bring it to a boil.
  3. Dip a corn tortilla in hot water for a few seconds.
  4. Remove tortilla from water and put about 1 Tbsp of cheddar cheese and 1 Tbsp of onion in the middle, roll it up and place in a 13 by 9 inch greased pan. Repeat.
  5. Pour meat sauce on top then sprinkle with onions and cheddar cheese.
  6. Bake at 350 degrees for 30 minutes.
