Breakfast Tacos

Ingredients

  • 1/2 onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 Tbsp chili powder
  • 1 Tbsp or 3 cloves garlic, minced
  • 1 potato, diced or shredded
  • 1 jalapeño, chopped
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 lb chorizo or breakfast sausage
  • 1 dozen eggs
  • Corn or flower tortillas

Instructions

  1. Sauté onions, cilantro, chili powder, garlic, potato, jalapeño, salt and pepper.
  2. Add the chorizo or sausage to the skillet and fry well.
  3. While cooking, whisk the eggs in a bowl.
  4. Drain grease from the skillet or soak up with paper towels.
  5. Add the eggs to the skillet and stir continually until ready.
  6. Serve with corn or flour tortillas. Add your favorite salsa, hot sauce, pico de gallo, cheese, etc.
