Ingredients
- 1/2 onion, chopped
- 1/4 cup cilantro, chopped
- 1 Tbsp chili powder
- 1 Tbsp or 3 cloves garlic, minced
- 1 potato, diced or shredded
- 1 jalapeño, chopped
- 1/2 tsp salt
- 1 tsp pepper
- 1 lb chorizo or breakfast sausage
- 1 dozen eggs
- Corn or flower tortillas
Instructions
- Sauté onions, cilantro, chili powder, garlic, potato, jalapeño, salt and pepper.
- Add the chorizo or sausage to the skillet and fry well.
- While cooking, whisk the eggs in a bowl.
- Drain grease from the skillet or soak up with paper towels.
- Add the eggs to the skillet and stir continually until ready.
- Serve with corn or flour tortillas. Add your favorite salsa, hot sauce, pico de gallo, cheese, etc.
