Chicken Mole

Ingredients

  • 1 whole chicken
  • 1/3 cup shortening
  • 1/3 cup + 2 Tbsp flour
  • 1 Tbsp or 3 cloves garlic, minced
  • 1/3 cup creamy peanut butter
  • 3 and 1/2 tsp allspice
  • 4 Tbsp chili powder
  • 4 Tbsp sugar
  • Salt
  • Pepper
  • 4 cups chicken broth

Instructions

  1. Boil, debone and shred chicken.
  2. Melt shortening.
  3. Add flour to thicken.
  4. Add garlic and fry slightly.
  5. Add peanut butter and stir to melt.
  6. Add allspice, chili powder, sugar, salt, and pepper.
  7. Mix well and slowly whisk in chicken broth. Stir and simmer until thick.
  8. Add chicken and stir well; simmer.
  9. Serve with Spanish rice, refried beans, and flour tortillas.
