Chinese Napa Cabbage Salad

Salad Ingredients

  • 1 large Chinese Napa cabbage, finely chopped
  • 6 green onions, diced
  • 2 pkg ramen noodles, broken up, discard season packet
  • 1/2 cup sesame seeds
  • 4 oz almonds, slivered
  • 1/2 cup butter
  • 8 oz can mandarin oranges, drained

Instructions

  1. Combine cabbage and onions in a large bowl.
  2. Brown noodles, sesame seeds and almonds with the butter in a saute pan.
  3. Drain the saute pan and add ingredients to the large bowl.

Dressing Ingredients

  • 1/2 cup rice wine vinegar
  • 1/4 cup sugar
  • 1/4 cup corn oil, or other light oil
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil

Instructions

  1. Whisk dressing ingredients and pour over salad before serving.
  2. Eat as a side dish or add a protein for a main dish.
  3. Not recommended for left-overs as the noodles will get soggy.
