Connolly’s Special Beans

Ingredients

  • 2 Tbsp oil
  • 1 sweet onion, chopped
  • 4 slices of bacon or BBQ brisket, chopped (omit for vegetarian)

  • 15 oz can pork-n-beans (or another type for vegetarian)
  • 15 oz can navy beans, drained and rinsed
  • 15 oz can ranch style beans
  • 15 oz can pinto beans, drained and rinsed
  • 1 cup water
  • 2 Tbsp BBQ sauce
  • 2 Tbsp chili powder
  • 1 Tbsp brown sugar
  • 1 Tbsp garlic pepper
  • 4 Tbsp picanté sauce
  • 1 Jalapeño, seeded and diced
  • Salt
  • Pepper

Instructions

  1. Sauté the onion and bacon.
  2. Combine all ingredients in a pot and let simmer for 1/2 hour.
  3. Stir often so as not to burn or scorch the beans.
