Ingredients
- 24 slices bread, dried
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1 cup parsley, chopped
- 1/2 cup green onion, chopped
- Turkey liver, heart, and gizzard, cut in small pieces
- 4 eggs, beaten
- 1/2 cup pecans, chopped
- 1/4 cup raisins
- 1 qt milk more or less
Instructions
- Let bread soak in water while cutting up all ingredients.
- In a very large pan, fry the liver, heart and gizzard.
- Add onions, parsley, greens, and celery then fry for about 5 minutes.
- Squeeze water out of bread while cooking.
- Add pecans and raisins and fry for about 30 seconds.
- Add bread and cook slowly and stir often for about 10 minutes.
- Mix beaten eggs with 2 cups of milk and add to the pan. Gradually add more milk to desired thickness.
- Cook in a casserole dish at 350 degrees for 1 hour or until done.
