Dressing: Bread

Ingredients

  • 24 slices bread, dried
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 cup parsley, chopped
  • 1/2 cup green onion, chopped
  • Turkey liver, heart, and gizzard, cut in small pieces
  • 4 eggs, beaten
  • 1/2 cup pecans, chopped
  • 1/4 cup raisins
  • 1 qt milk more or less

Instructions

  1. Let bread soak in water while cutting up all ingredients.
  2. In a very large pan, fry the liver, heart and gizzard.
  3. Add onions, parsley, greens, and celery then fry for about 5 minutes.
  4. Squeeze water out of bread while cooking.
  5. Add pecans and raisins and fry for about 30 seconds.
  6. Add bread and cook slowly and stir often for about 10 minutes.
  7. Mix beaten eggs with 2 cups of milk and add to the pan. Gradually add more milk to desired thickness.
  8. Cook in a casserole dish at 350 degrees for 1 hour or until done.
