Lasagne

  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 lb ground pork sausage
  • 1 lb ground beef
  • 28 oz can diced tomatoes
  • 12 oz tomato paste
  • 1/2 cup water
  • 1 tsp salt
  • 1/2 tsp basil 
  • 1/2 tsp oregano 
  • 1/2 tsp cayenne red pepper
  • 1 can Rotél tomatoes
  • 1/4 cup fresh parsley, chopped, dry is ok
  • 1 lb large or small curd cottage cheese
  • 1/2 lb mozzarella 
  • 1 lb oven-ready, no boil, lasagna noodles

  1. Sauté onion and garlic in olive oil.
  2. Add ground pork sausage and ground beef and brown.
  3. Add everything except cottage cheese and mozzarella. Simmer covered for 1 hour.
  4. Pour 1/4 of the meat sauce in a pan and cover with strips of lasagna noodles. Add dollops of cottage cheese. Repeat the process, then top with mozzarella.
  5. Add 1 cup of water then cook for 30 minutes.
