- 2 Tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 lb ground pork sausage
- 1 lb ground beef
- 28 oz can diced tomatoes
- 12 oz tomato paste
- 1/2 cup water
- 1 tsp salt
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp cayenne red pepper
- 1 can Rotél tomatoes
- 1/4 cup fresh parsley, chopped, dry is ok
- 1 lb large or small curd cottage cheese
- 1/2 lb mozzarella
- 1 lb oven-ready, no boil, lasagna noodles
- Sauté onion and garlic in olive oil.
- Add ground pork sausage and ground beef and brown.
- Add everything except cottage cheese and mozzarella. Simmer covered for 1 hour.
- Pour 1/4 of the meat sauce in a pan and cover with strips of lasagna noodles. Add dollops of cottage cheese. Repeat the process, then top with mozzarella.
- Add 1 cup of water then cook for 30 minutes.
