Meatloaf: Turkey and Spinach

Meatloaf

  • 1 1/2 lb ground turkey
  • 3 bread slices, torn & pulsed for 30 seconds in processor for soft bread crumbs
  • 1 small onion, chopped
  • 1/2 cup tomato sauce
  • 1 egg
  • 2 cloves garlic, crushed or 1/2 tsp garlic powder
  • 1 1/2 tsp Italian seasoning
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 1/4 tsp crushed red pepper flakes
  • 4 jalapeños, chopped

Filling

  • 10 oz chopped frozen spinach, thawed and squeezed dry
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • 1/2 red bell pepper, finely chopped

  1. Preheat the oven to 350 degrees.
  2. Mix meatloaf ingredients in a large bowl.
  3. Mix filling ingredients in a separate bowl.
  4. On a large sheet of wax paper, press the meat mixture into an 8 by 14 inch rectangle about 1/2 thick.
  5. Spread filling mixture on top leaving a 3/4 inch border around edges.
  6. Roll from the short end in a jelly roll fashion. Press meat mixture at both ends to seal. Place seam side down in a covered baking dish. Sprinkle top with additional parmesan cheese, if desired.
  7. Bake for 60 to 75 minutes until the internal temperature reaches 165 degrees.
  8. Cut into 1” thick slices to serve.
