Meatloaf
- 1 1/2 lb ground turkey
- 3 bread slices, torn & pulsed for 30 seconds in processor for soft bread crumbs
- 1 small onion, chopped
- 1/2 cup tomato sauce
- 1 egg
- 2 cloves garlic, crushed or 1/2 tsp garlic powder
- 1 1/2 tsp Italian seasoning
- 3/4 tsp salt
- 3/4 tsp pepper
- 1/4 tsp crushed red pepper flakes
- 4 jalapeños, chopped
Filling
- 10 oz chopped frozen spinach, thawed and squeezed dry
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, shredded
- 1/2 red bell pepper, finely chopped
- Preheat the oven to 350 degrees.
- Mix meatloaf ingredients in a large bowl.
- Mix filling ingredients in a separate bowl.
- On a large sheet of wax paper, press the meat mixture into an 8 by 14 inch rectangle about 1/2 thick.
- Spread filling mixture on top leaving a 3/4 inch border around edges.
- Roll from the short end in a jelly roll fashion. Press meat mixture at both ends to seal. Place seam side down in a covered baking dish. Sprinkle top with additional parmesan cheese, if desired.
- Bake for 60 to 75 minutes until the internal temperature reaches 165 degrees.
- Cut into 1” thick slices to serve.
