6 to 8 Servings
- 1 cup rice
- 1 lb ground beef or 15 oz can lentils / beans
- 14.5 oz can fire-roasted tomato salsa or Rotél tomatoes
- 12 oz can tomato sauce
- 6 oz can tomato paste
- 1/2 lb cheddar cheese, shredded
- Cook rice and ground beef separately.
- Add all items in a pot. Simmer over low heat until cheese is melted.
