Wet Mixture
- 3 eggs, beaten
- 1 cup vegetable oil
- 2 cup sugar
- 2 tsp vanilla
Dry Mixture
- 2 cup flour
- 1 tsp cinnamon
- 1 tsp cloves
- 1 tsp nutmeg
- 2 tsp baking soda
- 1 tsp salt
- 1/2 tsp baking powder
- 1 cup nuts, chopped
- 2 cup zucchini, unpeeled and coarsely grated
- Combine wet mixture ingredients and mix well.
- Combine dry mixture ingredients and mix well.
- Combine wet and dry mixture ingredients and mix well.
- Stir in zucchini.
- Pour batter into 2 greased and floured loaf pans.
- Bake at 350 degrees for 45 to 60 minutes.
- Allow to cool 20 minutes before removing from the pan.
