Zucchini Cake

Wet Mixture

  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 2 cup sugar
  • 2 tsp vanilla

Dry Mixture

  • 2 cup flour
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp nutmeg
  • 2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 cup nuts, chopped
  • 2 cup zucchini, unpeeled and coarsely grated

  1. Combine wet mixture ingredients and mix well.
  2. Combine dry mixture ingredients and mix well.
  3. Combine wet and dry mixture ingredients and mix well.
  4. Stir in zucchini.
  5. Pour batter into 2 greased and floured loaf pans.
  6. Bake at 350 degrees for 45 to 60 minutes.
  7. Allow to cool 20 minutes before removing from the pan.
