Lentil Tacos

  • 1 Tbsp oil
  • 1 small yellow onion, finely diced
  • 1 clove garlic, minced
  • 2 cups water or vegetable broth
  • 1 cup brown lentils
  • 1 Tbsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/8 tsp red pepper flakes

Fixings

  • Taco shells, chalupas, corn tortillas, or flour tortillas
  • Romaine or Iceberg lettuce, shredded
  • Tomatoes, chopped
  • Cheddar cheese, shredded
  • Guacamole or avocados
  • Sour cream
  • Salsa, hot sauce, taco sauce
  1. Press Sauté on the pressure cooker. Add oil and when hot, add onion and cook for 2-3 minutes. Add garlic for 1 minute.
  2. Press Cancel and add remaining ingredients. Pressure cook on high for 20 minutes, then natural release.
