- 1 Tbsp oil
- 1 small yellow onion, finely diced
- 1 clove garlic, minced
- 2 cups water or vegetable broth
- 1 cup brown lentils
- 1 Tbsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp oregano
- 1/8 tsp red pepper flakes
Fixings
- Taco shells, chalupas, corn tortillas, or flour tortillas
- Romaine or Iceberg lettuce, shredded
- Tomatoes, chopped
- Cheddar cheese, shredded
- Guacamole or avocados
- Sour cream
- Salsa, hot sauce, taco sauce
- Press Sauté on the pressure cooker. Add oil and when hot, add onion and cook for 2-3 minutes. Add garlic for 1 minute.
- Press Cancel and add remaining ingredients. Pressure cook on high for 20 minutes, then natural release.
