Grill Ingredients
- Portobello mushrooms
- Red onion
Marinade Ingredients
- 1/2 cup olive oil
- 3 Tbsp red wine vinegar
- 1 tsp or 1 clove garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
Tomato Mixture Ingredients
- 1 red pepper, seeded and chopped
- 2 tomatoes, chopped
- 1/2 onion, chopped
- 1 tsp or 1 clove garlic, minced
Serving Ingredients
- 1/4 cup mayonnaise
- 1/4 cup fresh basil, chopped, optional but amazing!
- Burger buns, toasted if desired
- Baby leafy greens
Instructions
- Remove mushroom gills with a spoon and cut 1/16 inch deep slits on top, in a 1/2 inch crosshatch pattern.
- Slice red onion 1/2 inch thick, use toothpick to keep rings intact.
- Combine oil, vinegar, garlic, salt, and pepper in a gallon bag. Add mushrooms and let sit for 30 to 60 minutes.
- Cook tomato mixture in a skillet or pot until soft and it starts to char. Then, add a little water and cook a little more.
- Combine mayonnaise and basil in a small dish.
- Heat the grill until hot. Clean and oil cooking grate. Place mushrooms, gill side down, and place red onions on a grill and brush with marinade.
- Cook for 4 to 6 minutes. Flip, fill caps with tomato mixture then cook for another 3 to 5 minutes.
