Typical stuffing includes a grain, a protein, and seasoning. Stuff 6 peppers with anything. Below are sample base and cuisine ingredients. Bake in an oven or pressure cook as follows:
- Add 1/2 cup water and steamer basket with peppers in pot.
- Pressure cook on high for 6 minutes. Quick release.
Base Ingredients
- 2 cups cooked rice, couscous, quinoa, orzo, etc.
- 2 cups cooked lentils, chickpeas, beans, TVP, tempeh, crumbles, etc.
- 1 medium onion, diced
- 3 cloves garlic, minced
Mexican (quinoa and black beans)
- 1 cup salsa
- 2 tsp cumin
- 2 tsp chili powder
- 1 cup or half a 15 oz can whole kernel corn (rinsed and drained)
- 3 Tbsp nutritional yeast, add before serving
Asian (jasmine rice and chickpeas)
- 1/2 cup coconut milk
- 1/4 cup crushed tomatoes
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1/2 tbsp curry powder
Mediterranean (white rice and lentils)
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1/4 tsp red pepper flakes
- 15 oz can diced tomatoes
- 1/2 cup parsley, chopped, add before serving
Italian (orzo and sausage/crumbles)
- 2 tsp Italian seasoning
- 1/4 tsp red pepper flakes
- 15 oz can fire-roasted diced tomatoes
- 3 Tbsp nutritional yeast, add before serving
