Stuffed Peppers

Typical stuffing includes a grain, a protein, and seasoning. Stuff 6 peppers with anything. Below are sample base and cuisine ingredients. Bake in an oven or pressure cook as follows:

  1. Add 1/2 cup water and steamer basket with peppers in pot.
  2. Pressure cook on high for 6 minutes. Quick release.

Base Ingredients

  • 2 cups cooked rice, couscous, quinoa, orzo, etc.
  • 2 cups cooked lentils, chickpeas, beans, TVP, tempeh, crumbles, etc.
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Mexican (quinoa and black beans)

  • 1 cup salsa
  • 2 tsp cumin 
  • 2 tsp chili powder
  • 1 cup or half a 15 oz can whole kernel corn (rinsed and drained)
  • 3 Tbsp nutritional yeast, add before serving

Asian (jasmine rice and chickpeas)

  • 1/2 cup coconut milk
  • 1/4 cup crushed tomatoes
  • 2 Tbsp soy sauce 
  • 1 Tbsp sesame oil
  • 1/2 tbsp curry powder

Mediterranean (white rice and lentils)

  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/4 tsp red pepper flakes
  • 15 oz can diced tomatoes
  • 1/2 cup parsley, chopped, add before serving

Italian (orzo and sausage/crumbles)

  • 2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 15 oz can fire-roasted diced tomatoes 
  • 3 Tbsp nutritional yeast, add before serving 
  • 1/4 cup parsley, chopped, add before serving
