Asian Vegetable Stir Fry

Sauce Ingredients

  • 1/4 cup soy sauce
  • 1 Tbsp or 3 cloves garlic, minced
  • 3 Tbsp brown sugar
  • 1 tsp sesame oil
  • 1/2 cup water or vegetable broth
  • 1 Tbsp cornstarch
  • chopped green onions and sesame seeds for garnish (optional)

Vegetables

  • 2 Tbsp olive oil, sesame oil
  • 6 cups assorted veggies such as bell peppers, sugar snap peas, carrots, mushrooms, broccoli, or any other veggies
  • 1 cup baby corn, bamboo shoots, sprouts, and/or water chestnuts

Instructions

  1. In a small bowl, whisk together sauce ingredients.
  2. Sauté vegetables 2-3 minutes until they are almost tender.
  3. Pour sauce over the vegetables and cook until the sauce has thickened.
  4. Garnish with green onions and sesame seeds and serve.
  5. Pairs well with Jasmine rice and/or Asian Baked Tofu.
