Blue Cheese Dressing

Ingredients

  • 1/4 block firm tofu
  • 1 and 1/2 cups raw cashews

  • 3/4 cup water
  • 2 Tbsp white vinegar
  • 3 Tbsp lemon juice
  • 1/2 tsp onion powder
  • 1/2 tsp dried dill
  • 1 tsp salt

Instructions

  1. Remove water from tofu.
  2. Microwave 2 cups of water for 2 minutes, add cashews and soak for 10 minutes.
  3. Drain cashews and add to a high powered blender.
  4. Except tofu, add all ingredients and blend until smooth and creamy, the pour into a bowl.
  5. Pat the tofu dry and crumble into the dressing. Stir gently to mix.
  6. Place in the refrigerator for 30 minutes before serving.
  7. If it thickens, thin it with a few tablespoons of water if needed. Fresh for 5 days and can be frozen.
  8. Serve with Buffalo Cauliflower Wings.
