Cashew Cream

Makes about 1 cup

Ingredients

  • 3/4 cup raw cashews
  • 3/4 cup almond milk
  • 1 Tbsp lemon juice
  • 1/4 tsp coarse sea salt

Instructions

  1. Place cashews in a bowl, cover them with boiling water, soak for at least 30 minutes, then drain.
  2. In a high-powered blender or food processor (not a chopper), add all ingredients. Process for 2 to 3 minutes until smooth and thick.
