Dry Ingredients
- 2 pkgs cornbread mix
or the following:
- 1 and 1/4 cup flour
- 1 cup yellow corn meal
- 1/2 cup sugar
- 1 tsp salt
- 1 Tbsp baking powder
Wet Ingredients
- 1/3 cup salsa
- 1/3 cup applesauce or vegetable oil
- 1 cup milk
- 1 egg (optional)
- 15 oz can of whole kernel corn rinsed and drained
- 1-2 jalapeños (optional)
Instructions
- Preheat the oven to 400 degrees. Generously oil the bottom and sides of the cast-iron skillet. Place in the oven to get hot while making the batter.
- In a large bowl, add dry ingredients and stir.
- Add wet ingredients and stir.
- Pour batter into skillet.
- Bake for 30-40 minutes, until a toothpick inserted into the center comes out clean.
