Cast-Iron Texas Cornbread

6 to 8 servings

Dry Ingredients

  • 2 pkgs cornbread mix

or the following:

  • 1 and 1/4 cup flour
  • 1 cup yellow corn meal
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 Tbsp baking powder

Wet Ingredients

  • 1/3 cup salsa
  • 1/3 cup applesauce or vegetable oil
  • 1 cup milk
  • 1 egg (optional)
  • 15 oz can of whole kernel corn rinsed and drained
  • 1-2 jalapeños (optional)

Instructions

  1. Preheat the oven to 400 degrees. Generously oil the bottom and sides of the cast-iron skillet. Place in the oven to get hot while making the batter.
  2. In a large bowl, add dry ingredients and stir.
  3. Add wet ingredients and stir.
  4. Pour batter into skillet.
  5. Bake for 30-40 minutes, until a toothpick inserted into the center comes out clean.
