Chickpea Salad

Ingredients

  • 30 oz chickpeas, drained and rinsed
  • 1/2 cup mayonnaise
  • 2 Tbsp water
  • 1 Tbsp lemon juice
  • 1 tsp salt

  • 2 celery stalks, finely chopped
  • 1/3 cup sweet or dill relish, or pickles, finely chopped
  • 1/2 cup onions, finely chopped
  • 2 tsp pepper

Instructions

  1. Process 3/4 cup chickpeas, mayonnaise, water, lemon juice, and salt in a food processor until smooth, about 30 seconds, scraping down sides of bowl as needed.
  2. Add remaining chickpeas to the food processor and pulse about 4 times until coarsely chopped. Transfer to a bowl.
  3. Add celery, pickles, green onions, and parsley. Mix well and add salt and pepper to taste.
