Ingredients
- 30 oz chickpeas, drained and rinsed
- 1/2 cup mayonnaise
- 2 Tbsp water
- 1 Tbsp lemon juice
- 1 tsp salt
- 2 celery stalks, finely chopped
- 1/3 cup sweet or dill relish, or pickles, finely chopped
- 1/2 cup onions, finely chopped
- 2 tsp pepper
Instructions
- Process 3/4 cup chickpeas, mayonnaise, water, lemon juice, and salt in a food processor until smooth, about 30 seconds, scraping down sides of bowl as needed.
- Add remaining chickpeas to the food processor and pulse about 4 times until coarsely chopped. Transfer to a bowl.
- Add celery, pickles, green onions, and parsley. Mix well and add salt and pepper to taste.
