- 1 cup whole kernel corn
- 1/4 cup red onion, diced
- 2 Tbsp cilantro, chopped
- 2 Tbsp lime juice
- 1 Tbsp olive oil, vegetable broth or water
- 2 tsp fresh jalapeño, diced
- Combine all ingredients and serve with tostada chips.
