Salsa: Blueberry, Mango and Corn

  • 1 cup blueberries
  • 1/2 cup mango, diced
  • 1 cup whole kernel corn
  • 1/4 cup red onion, diced
  • 2 Tbsp cilantro, chopped
  • 2 Tbsp lime juice
  • 1 Tbsp olive oil, vegetable broth or water
  • 2 tsp fresh jalapeño, diced

  1. Combine all ingredients and serve with tostada chips.
