Black Bean Dip

Ingredients

  • 30 oz black beans, drained
  • 1 small onion, finely diced
  • 1 Tbsp or 3 cloves garlic, minced
  • 1 jalapeño pepper or 12 slices, finely diced
  • 1/2 cup water or broth or brine
  • 2 Tbsp lime juice
  • 1/2 tsp chili powder
  • 1/2 tsp coriander
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1 tsp paprika, smoked
  • 1 tsp pepper
  • 1 tsp salt

Instructions

  1. Using an immersion blender, or a food processor, blend all ingredients until creamy.
  2. Taste and add additional seasonings and lime juice as desired.
