Chilly Billy’s Hot Sauce

Makes 3 gallons or 24 mason jars (16 oz jars)
All ingredients are in ounces.
Liquid ingredients are measured. Dry ingredients are weighed.

Ingredients

  • 81.6 distilled white vinegar 9% (see below)
  • 312 water
  • 20.4 salt
  • 1.1 xanthan gum
  • 14.4 sugar
  • 4.6 garlic powder
  • 5.3 onion powder
  • 18.0 cayenne pepper
  • 1.8 cumin
  • 10.6 crushed red pepper
  • 7.7 pepper

If you can’t find 9% vinegar, use 6% or 5% vinegar at these amounts:

  • 122.4 distilled white vinegar 6%
  • 271.2 water

  • 146.9 distilled white vinegar 5%
  • 246.7 water

Instructions

  1. Add vinegar and water to a 5 gallon bucket and stir.
  2. Add gum and salt in a bowl and mix. Add mixture to the bucket and stir.
  3. Add all ingredients, one at a time, stirring after each ingredient.
  4. Let it sit for a few hours, stirring occasionally.
  5. Take a PH reading which should be around 3.5 but not over 4.0 (Hanna PH Meter online about $30)
  6. Stir before pouring into each jar.
  7. Hot sauce has an indefinite shelf life but it will darken over time.
