- 1 Tbsp olive oil
- 1 medium yellow onion, diced
- 6 cloves garlic, minced
- 1 small green bell pepper, diced
- 1 small red bell pepper, diced
- 1 1/2 cup green or brown lentils
- 1 1/2 cup long-grain brown rice
- 4 cup vegetable broth
- 1 pkg taco seasoning
- 1 tsp coarse sea salt
- 4 oz can mild or hot green chiles, diced or chopped
- 14.5 oz can crushed fire-roasted tomatoes
- 2 medium tomatoes, diced
- 1/2 cup chopped cilantro
- 2 cups shredded cheese or queso.
- Press Sauté on the pressure cooker. Add oil, and when hot, add onion for 3 to 4 minutes. Add garlic for 1 to 2 minutes.
- Press Cancel. Except for cilantro and cheese, add all remaining ingredients and stir.
- Pressure cook on high for 12 minutes. Natural release for 15 minutes, then quick release.
- Stir in the cilantro and cheese.
