Ingredients
- 2 Tbsp olive oil
- 1 onion, chopped
- 1/3 cup garlic, minced
- 1 lb carrots, peeled and cut into 1/2 inch rounds
- 1 lb sweet potatoes, peeled and cut into 3/4 inch cubes
- 4 cups cauliflower, chopped (substitute, cabbage or other vegetables)
- 1 tsp rosemary, or 2 sprigs fresh rosemary
- 1 tsp thyme, or 6 sprigs fresh thyme
- 1 tsp coarse salt
- 1 tsp pepper
- 1/2 cup vegetable broth, yes only 1/2 cup, (substitute any broth or water)
- 2 Tbsp butter
Instructions
- Select Sauté on the pressure cooker and add the oil.
- When hot add onion and cook for 5 to 6 minutes. Then add the garlic and cook for 1 to 2 minutes.
- Select Cancel and add the all ingredients except the butter, and stir to combine.
- Pressure cook on high for 5 minutes. Quick release.
- Add the butter then blend until smooth with an immersion blender.
