Mashed Root Vegetables

Ingredients

  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1/3 cup garlic, minced

  • 1 lb carrots, peeled and cut into 1/2 inch rounds
  • 1 lb sweet potatoes, peeled and cut into 3/4 inch cubes
  • 4 cups cauliflower, chopped (substitute, cabbage or other vegetables)
  • 1 tsp rosemary, or 2 sprigs fresh rosemary
  • 1 tsp thyme, or 6 sprigs fresh thyme
  • 1 tsp coarse salt
  • 1 tsp pepper
  • 1/2 cup vegetable broth, yes only 1/2 cup, (substitute any broth or water)
  • 2 Tbsp butter

Instructions

  1. Select Sauté on the pressure cooker and add the oil.
  2. When hot add onion and cook for 5 to 6 minutes. Then add the garlic  and cook for 1 to 2 minutes.
  3. Select Cancel and add the all ingredients except the butter, and stir to combine.
  4. Pressure cook on high for 5 minutes. Quick release.
  5. Add the butter then blend until smooth with an immersion blender.
