Rich Simple Syrup Mix
- 2 parts white granulated sugar or raw cane sugar
- 1 part water
- Microwave water for 2 to 3 minutes to bring it to a boil.
- Add sugar and mix to dissolve.
- Store in fridge in an airtight container for up for several months as the higher sugar content inhibits bacterial growth.
- If it smells off or gets cloudy, discard, as this is a sign of bacterial growth.
Notes:
- The 2:1 ratio provides a thick and viscous syrup that is rich and provides a better mouth feel without diluting cocktails. Great for an Old Fashioned.
- Since it is sweeter, use about 2/3s of what you would for a recipe calling for simple syrup.
- Raw cane sugar is less refined, has a light brown color, and a subtle caramel taste.
