The Tom Collins originated from the John Collins cocktail that was created in the early 1840s in London. Bartenders switched to using old tom gin in the 1850s, hence the new name. Today It’s most often made with any gin.
As the drink migrated to the United States, there was a famous prank in 1874. A person will say “have you seen Tom Collins? He is in the bar talking bad about you.” The angry person would go into the bar and ask for Tom Collins and the bartender would serve them the cocktail.
- Fill a highball glass with ice.
- Add gin, lemon juice, simple syrup, and some ice to shaker, then shake.
- Pour into glass and top with seltzer water.
